It is made from olives harvested exclusively in Provence and pressed in the mill at the heart of the property.

This pale green oil with golden reflections reveals, on the nose and in the mouth, dominant aromas of greenery, fresh grass, foliage, green apple and almond.

Its structure is complex, smooth and balanced, with a good length in the mouth. Its slight bitterness and ardor contribute to its taste power.

The olives that are used to produce this oil are picked early in the season and immediately processed at the mill. Organoleptic maturity is favored over physiological maturity.

The estate's oils are produced in the property's mill, with the olives grown all year round. The juices are mixed and then assembled, always in search of excellent taste.
